Gingerbread Cookies
These cookies are traditional, crunchy, and mildly addictive. They can be frosted with royal or buttercream icing, but they’re quite sweet enough on their own.
3 cups flour
1/2 tsp. baking soda
1/4 tsp. baking powder
2 tsp. powdered ginger
2 tsp. cinnamon
1/2 tsp. salt
1/2 cup butter
1 egg
1/2 cup brown sugar
1/2 cup molasses
Cream together the butter, sugar, molasses, and egg, and then add the dry ingredients. Chill dough in the refrigerator for at least an hour. Roll it out between two sheets of plastic wrap to about 1/4 inch, and cut with a floured cookie cutter. Place cookies on baking sheets and bake at 325F for 11 minutes, or until the edges are dark brown.
